Recipe: Spiced Chickpeas with Roasted Garlic

spiced chickpeas with coconut oil and spices

Makes enough for 2 salads or topping for hummus!

1 tin chickpeas

3 tbsp coconut oil

2 tsp cardamom pods

2 tsp coriander seeds

1 tsp fennel seeds

1 tsp cumin seeds

4 roasted garlic, still soft (roast for approx 25 - 30mins)

First prepare the spices, add the 4 spices to a pestle and mortar and grind as smooth as you can. It will be hard to break down the cardamom pods, so do your best and remove the bits of pod that are left.

Put a frying pan on a medium heat and melt the oil. Add about 3/4 of the ground spices and gently stir until they start to sizzle. Add the chickpeas and mix continuously coating them in spices and oil. After 2 - 3 mins the chickpeas will start to colour, turn off the heat. Keep a good coating of oil on the chickpeas to stop them becoming dry.

Put the roasted garlic into a garlic crusher and squeeze over the chickpeas, mix well. Add a small pinch of salt if needed. Serve warm.
