SIMPLE GREEN SIDE SALAD
Serves 6 as a side
Ingredients:
1 courgette (thin and long if possible)
1/2 cucumber
1/2 Yellow Pepper
1/2 Orange pepper
handful sprouts (I use alfafa)
handful toasted seed mix (I use flax, sunflower, pumpkin)
1 romaine lettuce
Dressing:
2tbsp olive oil
2tbsp balsamic
1 garlic clove - squashed
I love this salad because it’s super easy, colourful and has lots of texture. First make the dressing, add all ingredients to a bowl and stir - infuse the garlic for atleast an hour and remove garlic before serving.
Prepare the veg - I like to use a potato peeler for thin strips of courgette, keep peeling until it’s all gone and watch your fingers at the end! Cut the cucumber in half, then half lengthwise, and lengthwise again into long strips. Thinly slice the pepper, and chop up the lettuce.
Mix all veg into a large bowl. I would add the lettuce slowly and find a good quantity ratio for the rest of the ingredients. I always have a jar of toasted seeds on hand but if not, add 1 tbsp of each seed to a pan and dry roast, moving often until lightly toasted. Cool then add to the salad.
I like using the orange and yellow pepper for flavour and also for colour. This salad is very simple, but fresh, colourful, delicious with lots of different textures. Drizzle with dressing (add slowly to desired amount).
